As a Cocktail Server in Blu, not only will you be working in a lively environment where you have the opportunity to connect with guests and build relationships, but you also have fantastic views of Lake Michigan from being on the 23rd floor. Among the social aspect of a cocktail server, you will provide the highest standards of service in food and beverage to our guests in a timely and friendly manner. During the winter holiday season, you have the pleasure to serve high tea to our guests.

ESSENTIAL FUNCTIONS:

* Check and maintain proper set-up and cleanliness of service station and floor before, during, and after shift.

* Greet guests in a timely, friendly, and courteous manner and explain all specials, promotions, and food options.

* Assist and responsible for service to all guests. Certain responsibilities will change when assigned to a serving section. Always responsible for every guest no matter where they are in lounge.

* Take order and recite selection of all call and premium brands as requested. This will require memorization of all available drinks, beer, and wines.

* Provide appropriate snack and garnish with all beverages.

* Input orders in a timely manner into point of sale system to inform bartender. All orders must be rung in before they are made.

* Maintain cleanliness of guest tables, empty ashtrays, keep floors clean, arrange tables and chairs in proper layout and assist with the bar area.

* Replenish beverages as requested, frequently checking back with guest to inquire about satisfaction and anticipate guest's needs before they are asked for.

* Present the guest with the check promptly, receive cash from guests, make change if needed, verify validity of charges and record charges in order to balance all monies. Thank guest and invite them to return to frequent the lounge/bar again.

* Perform general cleaning tasks using standard cleaning products as assigned by Manager to adhere to health standards.

* Responsible for stocking of straws, napkins, glassware, matches and food on a daily basis.

* Clear tables within 3 minutes of guest leaving.

* Perform other duties and responsibilities as assigned by Manager.

POSITION REQUIREMENTS:

* Must have basic knowledge of food and beverage preparation and service levels for high volume bar.

* Must have high knowledge of spirits and beer. Must be able to recite trendy liquors, and have a good understanding of wines.

* Constant awareness of surroundings, guest's needs and Corporate standards being followed.

* Ability to read, sufficient to understand menus and special promotions speak and write the English language to communicate with the guest, and take orders.

* Ability to remember, recite, and promote a variety of menu items.

* Ability to transport trays weighing up to 25 lbs. through a crowded room on a continuous basis throughout shift.

* Must adhere to all State, Federal, and Corporate liquor regulations pertaining to serving alcoholic beverages to minors and intoxicated guests to ensure all laws are being followed.

* Maintain a positive attitude throughout shift.

* Perform all assigned side work and complete daily checklist.

* Must work as a team player.

* Ability to remain motivated during busy and slow periods within shift.

* Prior cash handling experience required. This is a cash handling and self-banking position that requires the ability to maintain funds, accurately count back change, and accurately balance all monies.

* Ability to operate a keyboard and learn point of sale procedures to pre-check an order and close out a check

* 1 year cocktail serving experience required.

* Ability to obtain any government required license or certificate. TIPS certification preferred. Bartender certification preferred.
